Our favourite recipes HEADING_TITLE
Good gluten free recipes are hard to come by. And if you are like us, they take pride of place in the kitchen and are well used. We have included some of our favourite gluten free recipes below, and we hope you enjoy them as much as we do. In addition, we have included links to other fantastic gluten free recipe sites, and useful background information on some gluten free ingredients too.

Lemonade Scones

Ingredients:
3 cups Gluten free self-raising flour. (We recommend Orgran S.R flour)
1 cup of thickened cream. (Not light)
1 cup of lemonade
Extra cream for whipping and serving with jam.

Method:
Preheat oven to hot. (230 degrees)
Mix all ingredients together until just combined. Do not over mix. Place the dough onto a lightly floured board and with a little extra flour press into shape. Do not knead.Lightly roll dough flat to about 2cm high, cut using a scone cutter and place onto a greased baking tray.Cook on high for 10-15 minutes on the top shelf of the oven. Serve with extra whipped cream and jam.

Chocolate Patty Cakes
These are our kid’s favourite cakes. Great for school lunches.

Ingredients:
11/4 cups of Gluten free self-raising flour.
50g butter
2/3 cup of castor sugar.
1 egg
¼ teaspoon salt.
5 tablespoons milk
1 tablespoon cocoa.
50gm grated chocolate
½ teaspoon Vanilla Essence

Method:
Sift flour, sugar, cocoa and salt into a bowl, add grated chocolate. Chop or beat in softened butter. Beat into a smooth paste with 4 tablespoons of milk. Add egg, 1 tablespoon milk and Vanilla Essence, beat with a wooden spoon or electric mixer on medium speed for 2 minutes. Half fill paper patty cases or greased patty tin with mixture. Bake in a moderate oven 15-20 minutes. Cool and ice with Chocolate Soft Icing.

Chocolate Soft Icing

Ingredients:1 cup pure icing sugar
1 tablespoon melted butter
2 tablespoons cocoa
1 teaspoon Vanilla Essence
Warm water.
Method:Sift sugar and cocoa, add melted butter and vanilla essence. Mix with a little warm water until of spreading consistency.

Traditional Irish Fruit Bread

Ingredients:
375gm (11/2 cups) dried fruit
1 cup of strained strong tea
1 cup dark brown sugar
1 egg
2 cups Gluten Free Self Raising Flour
a pinch of salt

Method:
Soak fruit and sugar in tea overnight. Add egg and mix in, then add sifted flour and salt. Pour into a loaf tin lined with Glad Bake. Bake for 2 hours at 150 degrees or 11/2 hours in a moderate oven. Serve spread with butter.

Why are gluten free foods hard to find?

The manufacturing and shipping of gluten free foods brings new challenges. Many commonly used binding agents, fillers, and flavour enhancers contain gluten. Gluten also helps to extend the shelf life of products. Specialty gluten free food manufacturers have addressed these issues through the use of gluten free alternatives and better manufacturing processes. This can sometimes mean that gluten free food is more expensive to produce than equivalent products that contain gluten. In addition, greater care is required in the shipping and handling of gluten free food.
